Course Descriptions:
Intro to Culinary Arts
Students will receive a comprehensive introduction to knife skills and kitchen sanitation. Nutrition, safety, and teamwork are emphasized along with science, technical reading and math skills. Students will learn the basics of planning, selecting, preparing and presenting food. Careers in culinary arts will be introduced. Students will prepare a variety of recipes which increase in difficulty throughout the semester. $15 course fee
Intro to Baking
Prerequisites: Successful completion of Intro to Culinary Arts. Students will receive a comprehensive introduction to the bakeshop. Principles of baking, professional techniques, tools and recipes will be explored. Careers in baking will be introduced. Course topics will include quick and yeast breads, puff pastry, croissants, cookies and brownies. Students will participate in baking labs designed to increase in difficulty throughout the semester. $15 course fee
Advanced Baking
Prerequisite: Successful completion of Intro to Culinary Arts and Intro to Baking. Students will continue building their professional baking skills through the use of more advanced techniques and recipes. Topics include pies, cakes, cake decorating, custards, plated desserts, sugar and chocolate work. Class will continue to explore careers in baking. Students will participate in baking labs designed to increase in difficulty throughout the semester. $15 course fee
World Cuisine
Prerequisite: Successful completion of Intro to Culinary Arts. Expand your knowledge of global cuisine and cultures through cooking and learning about different regions of the world. Authentic recipes from North America, South America, Africa, Asia and Europe will be prepared. Use your creativity to develop exotic international dishes. $15 course fee
ProStart
Prerequisites: Successful completion of Intro to Culinary Art and consent of instructor. Nationally recognized, industry driven curriculum. Aligns with American Culinary Federation required knowledge and skill competencies. Class time will be divided between hands-on culinary labs and instruction in front of the house/back of the house operations. Students will enhance their management and leadership skills through participation in a variety of catering and professional food service events. As part of the course, student will be working to obtain ServSafe certification. Content will alternate yearly so students can earn credit fro two consecutive years of ProStart. $15 course fee
Family Life
This course allows students to explore issues relating to themselves and their role in the family. Guest speakers, multimedia presentations, and class discussions are often used to help students gain an understanding of personal and family issues. Examples of topics include relationships with our parents and siblings, decisions about dating and marriage, decisions about having children, and family crisis situations. This course satisfies the required health credit for graduation from Portage High School.
Child Development
This course is designed for students who want to learn more about children. Students will explore the responsibilities that are involved in the parenting role and study childhood behavior and growth. The physical, emotional, social, and intellectual aspects of the child will be emphasized. This course will prepare students to be more knowledgeable parents and caregivers in their future. Careers possibilities will be explored. If you are considering a career in childcare, teaching, or entering any area of healthcare, social work or counseling, this class is for you.
Youth-To-Youth
Youth Tutoring Youth is open to students interested in working with young children. The field of education offers many career opportunities both in the traditional classroom and non-traditional classroom. Tutors are given classroom instruction in child development, effective tutoring strategies, lesson plan and material development and professional ethics. Students are assigned an elementary classroom where they tutor four days per week. Good attendance is required.
